An intensely rich and decadent chocolate mousse, made with just a few simple ingredients for a truly unforgettable dessert.

Ingredients

  • 6 ounces high-quality dark chocolate (70% cacao or higher), coarsely chopped

  • 4 large eggs, separated

  • 1/4 cup granulated sugar

  • Pinch of sea salt

  • 1/4 cup strong brewed coffee, cooled

  • Optional: 1 tablespoon of orange zest

Directions

  • Melt the Chocolate: Place the chopped chocolate in a heatproof bowl set over a saucepan of simmering water (make sure the bottom of the bowl doesn’t touch the water). Stir occasionally until the chocolate is completely melted and smooth. Remove from heat and let cool slightly.
  • Whisk Egg Yolks and Sugar: In a separate bowl, whisk together the egg yolks and sugar until light and pale yellow.
  • Combine Chocolate and Egg Yolks: Gradually pour the cooled melted chocolate into the egg yolk mixture, whisking constantly until smooth and well combined. Add the cooled coffee and mix well. If using, stir in the orange zest.
  • Whisk Egg Whites: In a clean, dry bowl, whisk the egg whites with a pinch of salt until stiff peaks form.
  • Fold in Egg Whites: Gently fold about one-third of the whisked egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites in two additions, being careful not to deflate the mixture.
  • Portion and Chill: Divide the mousse evenly among serving glasses or ramekins. Cover and refrigerate for at least 3 hours, or preferably overnight, to allow the mousse to set.
  • Serve: Serve chilled. Garnish with cocoa powder, shaved chocolate, or fresh berries, if desired.
